Please don’t ask me to share my Chocolate Lava Cake. I share many things, but this Chocolate Lava Cake isn’t one of them. I’m like Joey on Friends with this delicious bite on goodness…”Joey. Doesn’t. Share. Food!” End of story.

Let it be known, in advance, that this recipe isn’t healthy in any way, shape or form. At all. I refuse to even attempt to make healthy. Actually, I take that back. I do down a huge glass of non-fat milk with this beast. That’s good for my bones. No??

We use these French CorningWare Ramekins when making this Chocolate Lava Cake recipe. The cake doesn’t stick when we flip them over and they are easy to work with.

TIP- most folks use butter with this recipe, however we opt for Coconut Oil. Feel free to swap the two if you so choose. We’ve made it both ways with success.

4 Squares of Semi-sweet Baking Chocolate (or 4 oz of Chocolate Chips)
1/2 Cup Coconut Oil (or Butter)
1 Cup Powdered Sugar
2 Whole Eggs
2 Egg Yolks
6 Tb. Flour
1/8 Tsp. Vanilla (optional)


Pre-heat the oven to 425 degrees.

In a large bowl, add the chocolate and coconut oil and microwave for 60 seconds. Remove and whisk until the chocolate is fully melted (the chocolate won’t be fully melted when you remove it from the microwave). DO NOT overheat or the chocolate will burn.

Once the chocolate is fully melted, add the powdered sugar and whisk until combined.

Add the eggs, egg yolks and vanilla (optional) and whisk until combined.

Add the flour and whisk until combined.

Grease the Ramekins generously and divide the batter between 4 cups.

Bake 12-13 minutes (depending on your oven).

The center should be jiggling and soft while the outside edges are firm.

Top off with fruit, whip cream, ice cream or anything else you have and enjoy!

    This has to bake A LOT longer than 12-13 minutes. I went 19 and it still wasn’t done-in my convection oven.

    Found you on the Valentines Day Dessert Round Up – oh, wow…these cakes looks amazing! Going to make them soon! What caught my eye, was the hint of ‘healthy on top with the berries. Ha!
